What's Cooking - Honey BBQ Wings




 It’s Football season again and that means a steady Sunday diet of hotwings right?  LOL -  Last-night a sista was hungry and it was getting late and I didn't want to eat out so I decided to whip up some Honey BBQ wings.  Eveyone has their own way of cooking chicken, just thought I'd share mine:)  The recipe is quick, easy and the wings are great!  Enjoy!

Ingredients
Chicken Drumettes
Flour
Hot Sauce
BBQ Sauce
Honey
Seasoning


Directions
Coat chicken in flour mixture
Deep fry wings 10-12 minutes in oil - until golden brown
In a small saucepan, heat BBQ sauce, hot sauce and honey until warm; turn heat to low and keep warm.
Drain chicken.
Place chicken wings in a large bowl and toss with honey, hot sauce and your BBQ sauce of choice
Repeat with remaining chicken

Green With Envy!




This weekend was very relaxing for me. A lil football mixed with a little Lifetime equals a perfect Sunday afternoon! The weather was absolutely beautiful out here in Cali. It wasn't hot (but the sun was out) and it wasn't cold, which made the weather perfect for me:) Once I finally decided to get out of my comfortable bed, everyone who lays in it falls asleep...that's just how comfortble it is (lol) I threw on some jeans, a tank and this lil green sweater that I picked up at Target for $4 and headed out to grab a bite to eat.

What's cooking - Lemon Bars



I've been debating for a while on whether or not I should make these Lemon Bars because, from my past experiences the lemon bars I've tasted were way to tart for my liking.  I finally decided to give this recipe a try which was adopted by Ina Garten.  The recipe uses the juice from 2 limes which gave these babies a great contrast.  I don't mean to toot my own horn but BEEP BEEP.   Enjoy!


 Crust
  • 1/2 pound unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 2 cups flour
  • 1/8 teaspoon kosher salt
For The Filling
  • 6 extra large eggs at room temperature
  • 3 cups granulated sugar
  • 2 tablespoons grated lemon zest
  • 1 cup freshly squeezed lemon juice
  • Juice from 2 limes
  • 1 cup flour
  • Confectioners sugar for dusting


Preheat the oven to 350 degrees F.

For the crust, cream the butter and sugar until light in the bowl of an electric mixer fitted with the paddle attachment. Combine the flour and salt and, with the mixer on low, add to the butter until just mixed. Dump the dough onto a well-floured board and gather into a ball. Flatten the dough with floured hands and press it into a 9 by 13 by 2-inch baking sheet, building up a 1/2-inch edge on all sides. Chill for 15minutes.

Bake the crust for 15 to 20 minutes, until very lightly browned. Let cool on a wire rack. Leave the oven on.
For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 30 to 35 minutes, until the filling is set. Let cool to room temperature. Cut into triangles or squares and dust with confectioners' sugar.
